A rack oven gives you increased  efficiency and flexibility right there in your bakery store. A baking trolley allows you to conveniently load and unload stacked baking trays in one working step, making handling particularly easy. Rack ovens operate on the convection principle, in other words, on the basis of circulating hot air.

This circulating baking atmosphere is ideally suited to rolls and folded pastries such as croissants. It also gives you the option of baking all types of small and ready-made goods or large loaves - no problem! This means that a rack oven offers exceptional flexibility of use. Our R-EVOLUTION and IMPACT rack ovens do not use convection alone for heat transfer but combine this with a special patented technology. This accelerated yet softer form of heat transfer offers increased reliability for your processes and adds greater range to your product assortment.

All our ovens are designed for reliability in continuous use over long operating periods. Each of our rack ovens is therefore based on a thick and stable base plate in stainless steel. High-temperature parts are made using heat-resistant stainless steel alloys.

The standard baking chamber height of 2000 mm is sufficient for all sizes of transport rack. This means that up to 20 trays with a spacing of 84 mm can be accommodated on a small floor area. The gas-tight, welded walls of the baking chamber guarantee a high level of safety and long life. The robust, energy-saving door features dual locking, a steel frame and an internal door unlocking mechanism. Meanwhile the generous, double-glazed front window provides optimum visibility into the oven.

Also integrated into our rack ovens is a high-performance cascaded steam unit. The large-scale evaporator surface can generate an even body of steam in ample volumes at any time. An optional flowmeter also allows for the precision configuration of water quantity for the steam injection.

All operating and service elements of the unit can be accessed easily and unhindered from the front, from above or from within through the baking chamber. The R-Evolution rack oven is a true all-rounder. It creates a bridge between traditional artisan baking, involving old-style stone ovens, and modern high technology. A particular highlight is the patented Infrared-Ceramic technology (ICT).

The ceramic coating of the baking chamber walls emits infra-red radiation, which provides more effective heat transfer and enables the raw dough to reach baking temperature faster. It also acts as an oversized surface heat exchanger. The large masses store heat to guarantee stable temperatures - the temperature drop following loading is only between 5 and 15 degrees. One area in which you profit is increased aroma and taste and an extended shelf life for your products. Energy consumption and baking times are also significantly reduced. The COMET rack oven: clean and quiet baking with electricity

The COMET is the clean and simple alternative to traditional gas-fired baking. No need for burners or to be built into a flue gas stack.

This oven is used wherever  heating with electricity is practical and economical. As with all WACHTEL rack ovens, the baking chamber, front and external cladding are all made in high-quality stainless steel and finished to a high level.

Additionally, the Comet features the trusted Shopmatic controller with over 29 automatic programs as standard. It is simple to operate using a scroll wheel or using the keypad. A further option is the IQ TOUCH controller, operated via a large, high-resolution color screen and particularly user-friendly.

The COMPACT rack oven: classic baking with oil or gas firing

If you opt for the COMPACT, you receive our highly successful continuous burner with its well-established Wachtel technology. The unique crossflow blower provides an ideal atmosphere in the oven for producing premium goods without any risk of drying out. The generously-dimensioned fan drum operates at an unusually low speed and extends across the entire width of the transport rack.

This allows an entirely uniform distribution of air together with minimal air speed. For you the result is exceptionally high-quality baked goods with outstanding succulence, shelf life and aroma.

Specially-developed tubular heat exchangers in a special heat-resistant stainless steel further ensure energy-efficient and reliable production. The COMPACT rack oven is engineering ingenuity at its highest level. It is available with gas or oil firing and with the standard Shopmatic controller or the optional IQ TOUCH system.

Rack oven IMPACT: the best from two bakery worlds

The IMPACT is based on our tried and tested electrically heated rack oven COMET, its proved oven technology being optimised by using the baking chamber walls as oversized radiators in case of the IMPACT. Additionally, the insides of the bakery chambers have been provided with a ceramic coating (ICT), which emits infra-red thermal radiation that is ideal for baked goods providing the best from two bakery worlds: convection and radiation heat.

The benefits are perfectly obvious: an exceptional high baking quality and diversity. Biscuits as well as large loaves of bread are both produced batch-by-batch economically at a premium level, saving resources.
