In the frame of „Forum Frozen Bakeries - Markets and Trends“ hosted by ZDS, more than 30 international seminar participants took part in an excursion to visit our test bakery in Hilden on June 20, 2017.
Subject: In a blind tasting participants have to find out to what extend different temperature control profiles affect the quality during freezing. There was a choice of conventional frozen products as well as fresh pieces of dough, treated with COOL RISING. All products were tested and evaluated in a common assessment and a sensory evaluation. There was enough time left for professional exchange and discussions before the obviously excited participants went back to Solingen.
